INGREDIENTS:
- Filling:
- 1 lb dates 500 ml
- 1/2 cup sugar 125 ml
- 1/3 cup orange juice 100 ml
- 1 tbsp flour 15 ml
- Base:
- 3/4 cup butter 175 ml
- 3/4 cup brown sugar 175 ml
- 1/4 tsp salt 1 ml
- 1 cup rolled oats 250 ml
- 1 cup whole wheat flour 200 ml
PROCEDURE:
- Combine dates, sugar and juice in a medium bowl.
- Cook at P7 4 - 5 minutes, stirring occasionally.
- Puree in blender or food processor.
- Stir in flour.
- In a medium bowl, cream butter, sugar and salt together.
- Stir in oats and flour until mixture resembles coarse crumbs.
- Reserve 1 cup (250 ml) of base.
- Press remainder in 8" (20 cm) square dish.
- Spread date mixture evenly on top.
- Sprinkle on remaining base
- Cook at P4 14 - 16 minutes.
- Makes: 16 squares
CHEF's TIP:
no surprise here: many different dried fruits could be substituted.
