ZUCCHINI NUT BREAD

Using Panasonic INVERTER® Microwave


  
EQUIPMENT:
  •  Measuring Spoons
  •  Measuring Cup
  •  Microwave safe dish
  •  Electric Mixer
  •  Wooden Spoon or High Temp Rubber Spatula
  •  Wax Paper
INGREDIENTS:
  •  1 cup all-purpose flour 250 ml
  •  1/2 cup whole wheat flour 125 ml
  •  2 tsp ground cinnamon 10 ml
  •  1 tsp baking soda 5 ml
  •  1/2 tsp salt 2 ml
  •  1/2 tsp baking powder 2ml
  •  1/2 tsp ground nutmeg 2ml
  •  1/2 cup chopped nuts 125 ml
  •  1 cup packed brown sugar 250 ml
  •  1/2 cup oil 125 ml
  •  2 eggs 2
  •  1 tsp vanilla 5 ml
  •  1.5 cups shredded zucchini 375 ml
PROCEDURE:
  1.  Combine flours, cinnamon, baking soda, salt, baking powder, nutmeg and nuts; set aside.
  2.  In a large bowl, with an electric mixer at high speed, beat brown sugar, oil, eggs and vanilla for 2 minutes; stir in zucchini.
  3.  Add flour mixture. Stir only until flour is moistened.
  4.  Line bottom of a 9" x 5" (22 x 13 cm) loaf dish with wax paper.
  5.  Spoon batter into dish.
  6.  Shield ends of dish with 3" (7 cm) strips of foil, molding around dish.
  7.  Cook at P1 10 minutes; remove foil strips.
  8.  Cook at P6 5 - 6 minutes, or until top is dry and a toothpick inserted near center comes out clean.
  9.  To Complete: Let stand 15 minutes. Invert and remove wax paper, let stand until cool.
  10.  Store, covered, until ready to serve.
  11.  Makes: 1 loaf

Breads are funny – always make sure to insert a toothpick or clean wooden skewer to make sure they're done.
