INGREDIENTS:
- 1 cup all-purpose flour 250 ml
- 1/2 cup whole wheat flour 125 ml
- 2 tsp ground cinnamon 10 ml
- 1 tsp baking soda 5 ml
- 1/2 tsp salt 2 ml
- 1/2 tsp baking powder 2ml
- 1/2 tsp ground nutmeg 2ml
- 1/2 cup chopped nuts 125 ml
- 1 cup packed brown sugar 250 ml
- 1/2 cup oil 125 ml
- 2 eggs 2
- 1 tsp vanilla 5 ml
- 1.5 cups shredded zucchini 375 ml
PROCEDURE:
- Combine flours, cinnamon, baking soda, salt, baking powder, nutmeg and nuts; set aside.
- In a large bowl, with an electric mixer at high speed, beat brown sugar, oil, eggs and vanilla for 2 minutes; stir in zucchini.
- Add flour mixture. Stir only until flour is moistened.
- Line bottom of a 9" x 5" (22 x 13 cm) loaf dish with wax paper.
- Spoon batter into dish.
- Shield ends of dish with 3" (7 cm) strips of foil, molding around dish.
- Cook at P1 10 minutes; remove foil strips.
- Cook at P6 5 - 6 minutes, or until top is dry and a toothpick inserted near center comes out clean.
- To Complete: Let stand 15 minutes. Invert and remove wax paper, let stand until cool.
- Store, covered, until ready to serve.
- Makes: 1 loaf

Breads are funny – always make sure to insert a toothpick or clean wooden skewer to make sure they're done.
