Crustless Quiche
Sometimes the best lunches are ones that are quick to prepare. That’s what makes this crustless quiche a favourite for adults and kids. Serve warm for a light lunch or prepare the night before and cut into slices for a great lunchbox option. Cooked in the Panasonic NN-SF574S Inverter Microwave Oven. Ingredients
- 8eggs beaten
- 125 mlmilk
- 0.25 tspground black pepper
- 200 gcherry tomatoes halved
- 50 gbaby spinach roughly chopped
- 150 gbacon rind removed, roughly chopped
- 200 gtasty cheese grated
Steps
1) Lightly grease a microwave safe pie dish with butter or cooking spray oil. Set aside.
2) In a large bowl, whisk together the eggs, milk, and black pepper.
3) Add the tomato, spinach, bacon, and cheese to the egg mixture. Using a spatula or wooden spoon, mix thoroughly.
4) Pour the quiche mixture into the prepared pie dish. Place in the microwave and cook on Microwave, high for 18 minutes.
5) When the quiche is cooked, remove from the microwave oven and allow to cool. Can be served warm or allowed to cool completely before slicing for lunchboxes.
