Japanese Milk Loaf

Ingredients

5 g yeast
260 g bread flour
25 g caster sugar
¼ tsp salt
10 g milk powder
45 g butter, cubed, softened
1 egg, whisked
105 ml milk, warmed to 30°C

Steps

STEP 1

Remove the bread pan from the machine and place it on a set of scales. Add the dough ingredients to the pan in the order listed.

STEP 2

Insert the pan back into the machine. Select Menu 6 – Brioche, press the Crust Colour button until you get light crust, then press the Start button.

STEP 3

After 35 minutes – 45 minutes, a beep will sound. Press the Start button to resume. (If you don’t press it, the kneading will automatically continue after 10 minutes. If you want to add any mix in ingredients, this is the time to do so).

STEP 4

When the machine beeps eight times and the cube icon near "End" flashes, press the Stop button and carefully remove the bread. Shake the pan gently to release the loaf onto a wire rack to cool.

STEP 5

Best enjoyed on the day it’s made.
