Baked Eggs with Vegetables & Cheese
This delicious dish is the perfect way to make breakfast more exciting.
Ingredients
- 1egg
- 1/3 cupheavy cream
- 1 cupspinach
- 2 tbspchopped red and yellow pepper
- 1 tspfreshly chopped chives
- 1 tspred onion (chopped)
- Salt and Pepper
- 2 tbspparmesan cheese
- 2 tbspfeta cheese
To Serve
- toasted bread with butter
Steps
STEP 1
Wilt the spinach in a buttered pan.
STEP 2
Lightly oil a 10 ounce ramekin dish or coat with non-stick spray.
STEP 3
Add the spinach into the ramekin dish along with some peppers, onion and cheese.
STEP 4
Add the cream and crack in the egg on top. Cover with more peppers, onion and cheese.
STEP 5
Put your ramekin dish into a bain marie and fill the bain marie with hot water.
STEP 6
Bake in your combination oven for 15-20 minutes at 180°C.
STEP 7
Serve with buttered toast, veggies, and more cheese.
