Defrost the deep-frozen wonton leaves under a damp cloth.
Put the minced meat in a bowl. Chop shrimp and water chestnuts and add. Finely chop the peeled garlic and add it to the bowl. Knead the mixture well.
Season with fish sauce, soy sauce, sesame oil, sugar, and pepper.
Place 1 tbsp of the mass in the centre of the wonton leaves. Moisten the dough edges with a pastry brush. Pick up the dough corners so a bag is created. Turn a little and squeeze the dough tightly.
Tie the bundles together with 1 stalk of chives.
Fill the steam insert with 200 ml of water and place the sieve insert in the pan. Put the small packets on the sieve. Put on the lid and place in the microwave.
