Junior Individual Fish Pies
With a creamy, cheesy fish filling and fluffy potato topping, these pies are quick and easy to make with your children—and super yummy too!
Ingredients
Potato Topping:
- 375 gwhite potatoes (peeled and chopped)
- 50 gbutter
- 25 mlmilk
Filling:
- 25 gmedium onion (chopped into small chunks)
- 15 gflour
- 75 mlmilk
- 50 mlfish stock
- 125 gwhite fish fillet (skinned and cut into bite sized pieces)
- 125 gsalmon fillets (skinned and cut into bite sized pieces)
- 1 tspfresh parsley
- 25 gfrozen peas
- 50 ggrated cheddar cheese
Steps
STEP 1
Place the potatoes into a casserole dish.
STEP 2
Add 3 tbsp water, then cover and cook in microwave on High for 7-9 minutes.
STEP 3
Drain the potatoes, add 25g butter and milk and mash together. Leave to one side.
STEP 4
Place the remaining butter in a casserole dish with the onion. Cover and cook on High for 3 minutes.
STEP 5
Mix the flour into the butter and onion. Cook on High for 30 seconds.
STEP 6
Gradually stir in the 75 ml milk and then the stock. Cook on High for 3 minutes.
STEP 7
Add the fish and parsley. Cook on Medium for 3 minutes.
STEP 8
Stir in the peas and grated cheese.
STEP 9
Divide the fish pie mixture between 3 inch ramekin dishes. Top with mashed potato and sprinkle with cheese.
STEP 10
Cook the pies on enamel tray on Combination: Grill High + Medium for 10-15 minutes or until the cheese is melted.
