Chunky Vegetable Soup with Beans, Greens and Bacon

A hearty, rustic soup packed with carrots, leeks, celery, beans and greens, gently simmered with rosemary and smoked bacon for depth and comfort.

Ingredients

1 tablespoon olive oil
1 garlic clove minced
1 stick celery finely chopped
1 medium carrot diced
1 small leek halved and sliced
1 sprig rosemary
1 rasher smoked streaky bacon finely chopped
1 x 400 g tin borlotti or cannellini beans, drained and rinsed
500 ml vegetable or chicken stock
40 g baby spinach or kale
50 g frozen peas
Salt and pepper to taste

Steps

STEP 1

Add olive oil, garlic, celery, carrot, leek, rosemary, bacon, beans, and stock to the jug of the Panasonic Quiet Cooking Blender (MX-HG4401).

STEP 2

Turn the knob to the Manual setting. Select No Blend, set the temperature to 80°C, and the time to 22 minutes (00:22). Press Start to begin cooking.

STEP 3

After cooking, remove the rosemary sprig. Add the spinach (or kale) and peas, and stir until just wilted and heated through.

STEP 4

Season with salt and pepper to taste and serve hot.
