Corn Velouté with Spring Onion Drizzle
A silky sweetcorn velouté, blended until smooth and luxurious, finished with a spring onion drizzle made by pouring hot oil over fresh green onions for a fragrant, savoury contrast.

Ingredients

300 g sweetcorn kernels (fresh or frozen)
1 garlic clove peeled
1 tablespoon butter
200 ml vegetable stock
50 ml cream
Salt and pepper to taste
2 spring onions finely sliced
2 tablespoons neutral oil (e.g., sunflower or canola)
Steps
STEP 1
Add sweetcorn, garlic, butter, vegetable stock, cream, salt and pepper to the jug of the Panasonic Quiet Cooking Blender (MX-HG4401).
STEP 2
Turn the knob to the Smooth Soup setting and press Start.
While the soup is blending, place the sliced spring onions in a heatproof bowl. Heat the neutral oil in a small pan until shimmering, then pour it over the spring onions to sizzle and infuse. Set aside.
STEP 3
Serve the soup hot, drizzled with the spring onion oil.
