Healing Curried Carrot, Sweet Potato, Turmeric and Ginger Soup

A nourishing, golden-hued soup with sweet potato, carrot, warming curry spices, turmeric and fresh ginger. Smooth, soothing and packed with anti-inflammatory goodness.

Ingredients

250 g sweet potato peeled and chopped
200 g carrots peeled and chopped
1 garlic clove peeled
1 thumb-sized piece of fresh ginger sliced
1 teaspoon ground turmeric
1 teaspoon mild curry powder
200 ml vegetable stock
1 tablespoon olive oil
Salt and pepper to taste

Steps

STEP 1

Add the sweet potato, carrots, garlic, ginger, turmeric, curry powder, vegetable stock, olive oil, salt and pepper to the jug of the Panasonic Quiet Cooking Blender (MX-HG4401).

STEP 2

Turn the knob to the Smooth Soup setting and press Start.

Serve hot, optionally topped with yoghurt, seeds, or a swirl of coconut milk.
