Lemon & White Chocolate Curd
A silky citrus curd made with fresh lemon, eggs, and butter, finished with white chocolate for a rich, glossy twist. Perfect for spreading, layering or spooning.

Ingredients

3 large eggs
100 ml lemon juice
Zest of 1 lemon
100 g caster sugar
100 g unsalted butter cubed
100 g white chocolate finely chopped (to stir in after cooking)
Steps
STEP 1
Add the eggs, lemon juice, lemon zest, sugar, and butter to the jug of the Panasonic Quiet Cooking Blender (MX-HG4401).
STEP 2
Turn the knob to Manual mode. Set the temperature to 80°C, blending speed to Medium, and time to 15 minutes (00:15). Press Start.
STEP 3
Once cooking is complete, immediately add the chopped white chocolate and blend briefly or stir until melted and fully incorporated.
STEP 4
Pour into sterilised jars and allow to cool. Store in the fridge for up to one week.
