Sri Lankan Dal (Chunky Red Lentil Curry Soup)

A warming, fragrant dal made with red lentils, coconut milk, spices, curry leaves, and chilli. Gently cooked on the Chunky Soup setting for a richly textured, spiced dish with island flavour.

Ingredients

130 g red lentils rinsed
500 ml water
30 g onion chopped
30 g tomato chopped
1 teaspoon minced ginger
2 garlic cloves sliced
1 small green chilli halved
1 sprig curry leaves
½ teaspoon turmeric powder
½ teaspoon red chilli powder or cayenne pepper
½ teaspoon cumin powder
¼ teaspoon coriander powder
¾ teaspoon salt
100 ml full-fat coconut milk
Salt and pepper to taste

Steps

STEP 1

Add red lentils, water, onion, tomato, ginger, garlic, green chilli, curry leaves, turmeric, red chilli powder, cumin, coriander and salt to the jug of the Panasonic Quiet Cooking Blender (MX-HG4401).

STEP 2

Turn the knob to the Chunky Soup setting and press Start (cooks for 30 minutes).

STEP 3

Once the program is complete, open the lid and stir in the coconut milk.

STEP 4

Taste and adjust seasoning with additional salt and pepper if needed.

STEP 5

Serve hot with rice, roti, or on its own as a comforting lentil curry soup.
