Simple ingredients of yam and coconut milk combine for a tasty Raya dessert that is appealing to the eyes. Its classic flavour and pretty purple hue makes the yam layered kuih a family and guest favourite.

Bottom Layer Ingredients

  • 200 gyam, diced into 1 cm thickness
  • 120 mlwater
  • 75 grice flour
  • 125 mlcoconut milk
  • 225 mlwater
  • 0.5 tbspHoen Kwee flour (white)
  • 50 gsugar
  • 0.5 tspsalt

Top Layer Ingredients

  • 75 gplain flour
  • 50 gsugar
  • 1egg
  • 125 mlcoconut milk
  • 250 mlwater
  • 0.25 tspsalt
  • Purple colouring as needed

Steps

1) Bottom Layer: Put yam and water in a bowl.

2) Place in Panasonic Microwave Oven (NN-DS596BMPQ) and set Micro Power – High (1000 Watt).

3) Cook for 4 minutes or until tender. Stir after 2 minutes. Drain well and set aside.

4) Put all bottom layer ingredients (except yam) in Panasonic Mixer Grinder (MX-AC400).

5) Blend mixture and strain into a bowl.

6) Place into the microwave oven and set to Micro Power – High (1000 Watt).

7) Cook for 3 minutes. Stir with wire whisk after 1.5 minutes.

8) Add yam and stir well.

9) Pour batter into a 20cm bowl greased with oil.

10) Place into the microwave oven and set to Steam1 for 18 minutes. Set aside.

11) Top Layer: Put all ingredients in Panasonic Mixer Grinder.

12) Blend mixture and strain into a bowl.

13) Cook in the microwave oven on Micro Power – High (1000Watt) for 3 minutes.

14) Stir with wire whisk after 1.5 minutes.

15) Pour batter onto bottom layer.

16) Place into the microwave oven and set to Steam1 for 15 minutes. Allow to cool before slicing.
