Baked Pandan Kuih

Fragrant pandan leaves and coconut milk combine for a flavourful and colourful dessert that everyone is guaranteed to enjoy. Just add the finishing touch of sesame seeds and it is ready to serve.

Ingredients

  • 8pandan leaves
  • 300 mlwater
  • 2eggs
  • 90 gsugar
  • 300 mlcoconut milk
  • 210 gplain flour
  • 0.5 tspsalt
  • Green colouring as needed
  • 1 tbspmargarine, melted
  • 2 tbspsesame seeds
  • Oil for greasing

Steps

1) Blend pandan and water using Panasonic Mixer Grinder (MX-AC400).

2) Strain into a large jug.

3) Beat eggs, sugar and coconut milk using Panasonic hand-mixer (MK-GH1WSK).

4) Add pandan juice and green coloring.

5) Combine flour and salt in a large bowl.

6) Gradually add pandan-coconut milk mixture into flour and mix slowly using Panasonic hand-mixer.

7) Strain into a jug.

8) Set Panasonic Cubie Oven to Convention mode with preheat at 180°C.

9) When oven has preheated, place mould in the oven for 5 minutes.

10) Grease mould with a little oil.

11) Pour mixture into the mould.

12) Set the timer for 40 minutes; brush with melted margarine and sprinkle sesame seeds after 20 minutes.

13) Continue to bake until done.

14) Set aside to cool before slicing.
