Yam Layered Kuih
Simple ingredients of yam and coconut milk combine for a tasty Raya dessert that is appealing to the eyes. Its classic flavour and pretty purple hue makes the yam layered kuih a family and guest favourite.
1 hour 30 minutes
Bottom Layer: Put yam and water in a bowl.
Place in Panasonic Microwave Oven (NN-DS596BMPQ) and set Micro Power – High (1000 Watt).
Cook for 4 minutes or until tender. Stir after 2 minutes. Drain well and set aside.
Put all bottom layer ingredients (except yam) in Panasonic Mixer Grinder (MX-AC400).
Blend mixture and strain into a bowl.
Place into the microwave oven and set to Micro Power – High (1000 Watt).
Cook for 3 minutes. Stir with wire whisk after 1.5 minutes.
Add yam and stir well.
Pour batter into a 20cm bowl greased with oil.
Place into the microwave oven and set to Steam1 for 18 minutes. Set aside.
Top Layer: Put all ingredients in Panasonic Mixer Grinder.
Blend mixture and strain into a bowl.
Cook in the microwave oven on Micro Power – High (1000Watt) for 3 minutes.
Stir with wire whisk after 1.5 minutes.
Pour batter onto bottom layer.
Place into the microwave oven and set to Steam1 for 15 minutes. Allow to cool before slicing.
