To maintain the high quality of the cooking, Japanese staff are always on hand and free-range chicken is carefully grilled while soba noodles are handmade at the restaurant every morning and evening.

The restaurant's name, Mitsumori, came from Hisami Mitsumori, chairman of the Otoya Group. The chairman often visits the restaurant to enjoy its aesthetic Japanese exterior and chic, modern interior, which combine to offer a highly relaxing space.
