Mini Lemon Bundt Cakes

These mini lemon bundt cakes are tasty treats and perfect for sharing. You can prepare them in only 10 minutes and cook for 12-18 minutes.

Ingredients

2 eggs
2 cups flour
1.5 tsp baking powder
60 ml olive oil
0.5 cup sugar
1 cup milk
1 lemon zest
0.5 tsp lemon zest

Steps

STEP 1

Grease the mini bundt tins and pre-heat the combination oven to 170°C.

STEP 2

Put all the ingredients for the cakes into a mixing bowl and mix until well combined. Turn the mixture into the prepared tins.

STEP 3

Bake in the oven for about 12-18 minutes or until cakes are golden brown.

STEP 4

Allow the cakes to cool in the tins for a few minutes, then turn them out onto a cooling rack with a baking tray underneath to catch any drizzle.

STEP 5

Prepare lemon drizzle by mixing icing sugar with lemon juice. Pour over cakes.
