Vegetarian Quiche with Colourful Beet
Beetroot is super healthy – but not for everyone. Try yellow or ringed beets such as “Burpees Golden” or “Tonda di Chioggia.” Even the names are a poem and the turnips are tender and slightly sweeter than their well-known sister. We combine yellow, red and striped varieties in a quiche. This dish looks like a picture book and tastes wonderful.

Preheat the microwave (top / bottom heat: 220° C).
For the bottom, crumble yeast and mix with milk in a bowl.
Then add flour, butter and salt. Knead everything to a smooth dough.
Roll out the dough with a rolling pin (about 32 cm) and then place in a tart tin (about 27 cm).
Press on the edge and pierce the floor several times with a fork.
Bake the dough in the microwave at 220° C for about 15 minutes.
As the base bakes, prepare the beets. Wash the skins, peel them and slice them into thin slices.
Then spread the beetroot roses on the bottom of the quiche.
Mix eggs, cream and milk in a bowl and season with salt and pepper.
Then add the quiche with the cream-egg mixture.
Bake quiche in the oven (function: Oven) for approx. 25 minutes at 200° C.
