Portuguese Grilled Piri-piri Chicken

MARINADE
- 3 tspSmoked Paprika Powder
- 3 tspSalt
- 1 tspBlack Pepper
- 1 tspSugar
- 1 tspDried Thyme
- 2 tspGround Cumin
- 6Basil Leaves
- 5 clovesGarlic
- 0.5Onion, roughly chopped
- 0.25 cupCoriander Leaves
- 0.25 cupVinegar
 
- 2Chicken Thighs (or drumsticks)
- 3African Bird’s Eye Chili Peppers
- 1Lemon Juice
Steps
1) Marinade preparation: Place all ingredients for the marinade into a food processor. Blend for 60 seconds or until you have a smooth sauce.
2) Pat the chicken pieces dry using a paper towel and place them in a bowl. Pour the marinade over the chicken, making sure to coat both sides of the chicken. For best flavor, it is recommended to marinate the chicken in the fridge for 3 to 24 hours.
3) Take out the chicken from the fridge and preheat the oven to 220 degrees.
4) When preheating is complete, place the chicken onto the grill tray and cook in the oven for 40 minutes.
5) If there is leftover marinade, heat it up in a saucepan over medium-low heat. Then, pour the sauce over the chicken and garnish with cilantro.
6) Serve with a side dish of your choosing.
