Apple, Carrot, and Three Seed Muesli Bars

Imagine cooking perfectly crunchy, golden, and chewy muesli bars in your Microwave. We’ve adapted the recipe to reduce the sugar and added some nutritious seeds and naturally sweet carrot too. The perfect snack you can include in lunchboxes or freeze and enjoy on the go.

Ingredients

100 g unsalted butter
0.5 cup brown sugar (firmly packed)
4 tbsp golden syrup
250 g rolled oats
1 tbsp sesame seeds
1 tbsp sunflower seeds
1 tbsp pumpkin seeds
1 apple (peeled and grated, juice squeezed out)
1 small carrot (grated, juice squeezed out)

Steps

STEP 1

Preheat the Combo Microwave Oven on convection 180°C.

STEP 2

Place the butter, sugar, and syrup into a microwave-safe bowl and melt on medium for 2-3 minutes.

STEP 3

Mix in the oats, seeds, apple, and carrot. Make sure it is thoroughly mixed.

STEP 4

Press the mixture in a 20cm square baking tin, lightly greased.

STEP 5

Bake on convection 180°C for 20-25 minutes or until golden brown and firm to touch.

STEP 6

Cut into 10 bars whilst still warm and store in the fridge.

STEP 7

Serving Suggestion: Serve a muesli bar as a snack alongside some Greek or Natural Yogurt and sliced strawberries.

Storage: Keep muesli bars in an airtight container in the fridge for up to 5 days. Alternatively, freeze in individual portions for up to 3 months.
