Apricot & Coconut Cake

175 g butter
175 g caster sugar
3 medium eggs
200 g self raising flour
100 g desiccated coconut
150 g chopped apricot
3 tbsp milk
Steps
STEP 1
Cream the butter and the sugar together until the consistency is light and creamy.
STEP 2
Gradually beat in the eggs, and fold in the flour and desiccated coconut.
STEP 3
Add the chopped apricots and finally stir in the milk.
STEP 4
Pour into the prepared cake tin and cook on Convection 160°C and Simmer Power for 25 minutes.
