Garlic Herb Smashed Potatoes

750 g baby potatoes
0.25 cup melted butter
2 tsp olive oil
4 garlic cloves (minced)
1 tbsp mixed herbs (thyme, parsley)

Other Ingredients

0.25 cup freshly grated hard cheese or parmesan cheese
rosemary
3 garlic cloves
thyme leaves (for garnish)
Sour cream and chives for serving

Steps

STEP 1

Prick the potatoes with a fork several times. Place them in a microwave-safe bowl filled with water. Cover the bowl with a microwave lid and cook for 14- 15 minutes or until tender.

STEP 2

Drain potatoes and allow them to cool down for 5 minutes.

STEP 3

In a small bowl, add melted butter, olive oil, minced garlic, and herbs. Mix well and set it aside.

STEP 4

Using your palm or back of a fork, gently smash the potatoes until they are in one piece.

STEP 5

Preheat the Steam Combo Microwave Oven to 180°C. On the baking sheet, place the smashed potatoes, rosemary, and garlic cloves. Generously drizzle the herb mixture over them, sprinkle with salt and pepper, and bake for 15 minutes.

STEP 6

Sprinkle a generous serving of grated parmesan or hard cheese on the potatoes and return to the Microwave Oven for 10-14 minutes until they melt and render a crispy texture on the top.

Serve with sour cream topped with chives.
