Gluten-Free Cinnamon Fruit and Seed Loaf

Ingredients

120 g warm water
100 g dried fruit (Finely chopped if needed (eg. prunes, apricots, raisins, goji berries))
150 g milk (or almond milk)
1 tsp vanilla extract
15 g fast acting yeast
30 g caster sugar or honey
400 g gluten-free bread flour
1 tsp baking powder
1 tsp xanthan gum
2 beaten egg
1 tbsp ground cinnamon
100 g melted unsalted butter or dairy-free spread
50 g mixed seeds (Example: sesame, pumpkin, sunflower)
0.5 tsp sea salt

Steps

STEP 1

Place the dried fruit in the warm water and soak for 5-19 minutes to soften. Place the water and fruit into the loaf tin with the remaining ingredients.

STEP 2

Stir briefly to mix in the loaf tin.

STEP 3

Place the loaf tin in the bread machine. Close the lid.

STEP 4

Select the gluten-free bread programme. Press start.

STEP 5

When the machine beeps, your loaf is baked!
