Japanese Dumplings with Steamed Vegetables
No Japanese restaurant nearby? Try heading directly to your own kitchen to make these delicious vegan dumplings with steamed vegetables. You do not need a bamboo damper, as these delicious buns are simple steam-cooked in the microwave. Not only is everything homemade, this dish is the perfect start to the weekend.

Knead the ingredients for the dough together with 75 ml of warm water for 10 minutes to a smooth dough. Cover the dough and let it rest in a warm place for about 45 minutes. The volume should double. Meanwhile, cut the spring onions into fine rings.
When the dough has approximately doubled its volume, it’s ready to roll out. Roll the dough on a well-floured work surface rectangular to about 1.5 mm thickness. Sprinkle with spring onions and salt. Roll up loosely.
Cut the roll into 12 pieces. Put two pieces on top of each other. Compress deep in the middle and crosswise to the cutting edge with a chopstick or the handle of a cooking spoon. Fold with your hands slightly in the other direction to create a fan shape.
Add 150 ml of water to a pizza pan. Arrange buns on the steamer with some distance. Close with the lid and cook for 8 minutes at 1000 W.
Divide broccoli into florets and remove stalks of snow peas. Season vegetables with salt. Add vegetables to the buns in the steamer and cook for another 8 minutes.
Mix together all the ingredients for the sauce.
Slice radishes into thin slices. Mi with rice vinegar and syrup and set aside.
Sprinkle buns and vegetables with sesame seeds. Serve with radishes and teriyaki sauce.
