Junior Individual Fish Pies

With a creamy, cheesy fish filling and fluffy potato topping, these pies are quick and easy to make with your children—and super yummy too!

Ingredients

Potato Topping:

375 g white potatoes (peeled and chopped)
50 g butter
25 ml milk

Filling:

25 g medium onion (chopped into small chunks)
15 g flour
75 ml milk
50 ml fish stock
125 g white fish fillet (skinned and cut into bite sized pieces)
125 g salmon fillets (skinned and cut into bite sized pieces)
1 tsp fresh parsley
25 g frozen peas
50 g grated cheddar cheese

Steps

STEP 1

Place the potatoes into a casserole dish.

STEP 2

Add 3 tbsp water, then cover and cook in microwave on High for 7-9 minutes.

STEP 3

Drain the potatoes, add 25g butter and milk and mash together. Leave to one side.

STEP 4

Place the remaining butter in a casserole dish with the onion. Cover and cook on High for 3 minutes.

STEP 5

Mix the flour into the butter and onion. Cook on High for 30 seconds.

STEP 6

Gradually stir in the 75 ml milk and then the stock. Cook on High for 3 minutes.

STEP 7

Add the fish and parsley. Cook on Medium for 3 minutes.

STEP 8

Stir in the peas and grated cheese.

STEP 9

Divide the fish pie mixture between 3 inch ramekin dishes. Top with mashed potato and sprinkle with cheese.

STEP 10

Cook the pies on enamel tray on Combination: Grill High + Medium for 10-15 minutes or until the cheese is melted.
