Maple Roasted Parsnips & Apples

Ingredients

500 g parsnips (sliced in halves)
3 small apples (chopped)
1 large onion (cut into quarters)
3 garlic cloves
1 large sprig of rosemary (finely chopped)
4 tbsp maple syrup
2 heaped tbsp pomegranate seeds
salt & pepper
Steps
STEP 1
Prepare the parsnips, onion, and apples.
STEP 2
Place in a large mixing bowl along with the garlic, chopped rosemary, maple syrup, and a generous pinch of salt and pepper. Give it a shake.
STEP 3
Place in your Microwave Oven at 200°C for 30 minutes.
STEP 4
Remove from the Microwave Oven and give it a little stir to move the ingredients around. Add pomegranate seeds and place back in the oven for 15-30 minutes.
