Self-Saucing Christmas Pudding

Ingredients
Christmas Pudding
- 200 gmixed fruit
- 3 tbspbrandy
- 185 gself-raising flour
- 50 gdark brown sugar
- 1 tspground ginger
- 1 tspground cinnamon
- 1 tspmixed spice
- 100 gunsalted butter melted
- 125 mlmilk
- 60 mlgolden syrup
- 2eggs
- Double cream or ice cream to serve
Sauce
- 150 gdark brown sugar
- 2 tbspcornflour / corn starch
- 250 mlboiling water
Steps
1) The day before, soak the mixed fruit in brandy in a covered container. Allow to soak overnight.
2) Preheat microwave to convection 160°C.
3) Grease a 23cm round, 5cm deep baking dish with butter and set aside.
4) Make the pudding batter by placing the flour, sugar, and spices in a large bowl. Whisk to combine. Add the butter, egg, milk, and golden syrup to the flour mixture and whisk until combined. Fold through the mixed fruit. Scrape into the prepared baking dish and smooth the surface.
5) To make the sauce, combine the brown sugar and corn flour in a small bowl. Sprinkle the sugar mixture all over the surface of the pudding. Pour the boiling water over the surface over the back of a metal spoon so you don't break the surface of the batter.
6) Place the baking dish on the grill tray and place into the lower shelf position. Dial in 40 minutes and press start.
7) When the microwave beeps, remove the baking dish from the oven and allow to sit for 5-10 minutes.
8) Serve with double cream or ice cream.
