Ingredients

  • 1cauliflower
  • 1 piece ofginger (15g)
  • 1onion
  • 2tomatoes
  • 30 mltomato juice (or strained tomatoes)
  • 2 tbspoil
  • 1garlic clove
  • basil
  • 30 gcurry paste
  • salt
  • sugar
  • pepper

Steps

STEP 1

Use only the florets from the cauliflower, cut into thumb-sized pieces and place into a bowl.

STEP 2

Cut the ginger, onion, tomatoes and garlic into small cubes (1-2cm) and add to the cauliflower.

STEP 3

Add the oil and 10g of the curry paste to the bowl and mix everything well.

STEP 4

Cover the bowl and cook in your combination oven at 1000 watts for 3 minutes, followed by 600 watts for 5 minutes.

STEP 5

Mix and season the tomato juice with the remaining curry paste.

STEP 6

Add the sauce to the cauliflower, stir well and cook the curry in the microwave for another 4-5 minutes at 600 watts.
