Finish off your meal with this sweet snack that’s simple to bake in your combination oven.
Place the apricots in a small oblong dish so they fit snug. Save 90mls of the syrup from the tin then pour the remaining syrup over the apricots. Place the apricots on the base of the microwave and cook on high microwave for 2 mins.
Pre-heat the oven to 200°C.
Beat the cream cheese until softened, then gradually beat in the reserved syrup until smooth.
Spoon the cheese mixture over the apricots, sprinkle the ginger snap cookie crumbs over the top and bake in the middle shelf position for 10 minutes or until the crumb starts to darken.
Once darkened, remove from oven, leave to cool a little and enjoy!
