Maple Roasted Parsnips & Apples

Ingredients

Servings:1
  • 500 gparsnips (sliced in halves)
  • 3small apples (chopped)
  • 1large onion (cut into quarters)
  • 3garlic cloves
  • 1 largesprig of rosemary (finely chopped)
  • 4 tbspmaple syrup
  • 2 heaped tbsppomegranate seeds
  • salt & pepper

Steps

STEP 1

Prepare the parsnips, onion, and apples.

STEP 2

Place in a large mixing bowl along with the garlic, chopped rosemary, maple syrup, and a generous pinch of salt and pepper. Give it a shake.

STEP 3

Place in your Microwave Oven at 200°C for 30 minutes.

STEP 4

Remove from the Microwave Oven and give it a little stir to move the ingredients around. Add pomegranate seeds and place back in the oven for 15-30 minutes.
