Prepare the parsnips, onion, and apples.
Place in a large mixing bowl along with the garlic, chopped rosemary, maple syrup, and a generous pinch of salt and pepper. Give it a shake.
Place in your Microwave Oven at 200°C for 30 minutes.
Remove from the Microwave Oven and give it a little stir to move the ingredients around. Add pomegranate seeds and place back in the oven for 15-30 minutes.
