Place the coconut oil and maple syrup in a microwaveable bowl. Cover and cook on high for 30 seconds.
Add the oats, almonds, cinnamon, mixed spice, and nutmeg. Stir until coated.
Place back in the microwave, cover, and cook on high for 30 seconds.
Stir and repeat another two times for a total cooking time of 90 seconds.
Tip onto a baking tray and leave to cool and harden.
Once the granola is cooled, chop the dark chocolate into small chunks and add to the mixture.
Eat straight away or place in an air tight container. Consume within 2-3 days.
