Mango Cloud Cake
Let your superhero dad know how much he is treasured by baking him a decadent Mango Cloud Cake this Father's Day!
Preheat Panasonic Big Cubie Oven at 160C.
Cream together butter and sugar until light and fluffy. Add in the egg and mix well.
In another bowl, sieve together flour, baking powder, baking soda and salt.
Add half of the flour mixture into the butter batter. Fold to combine.
Pour in the coconut milk and milk. Stir well.
Add in the remaining flour mixture and give it a gentle mix. Stir in the mango cubes.
Bake in the preheated oven for 35 minutes.
To make the cloud, whip up the cream together with icing sugar until soft peak. Layer the cream over the cake to create a “cloud” effect. Decorate with mango slices and mint leaves.
