Chicken and Jackfruit Salad
For a refreshing change, tuck into a tangy salad of shredded chicken with pomelo, jackfruit and tomato in a light sweet and sour sauce. With fried shallots giving a crunchy texture, it's a recipe that's bursting with flavour.

- 80 gThai Palm Sugar
- 3 tbspFish Sauce
- 1Large lime, juiced
- 40 gHoney
- 200 gChicken, cooked and shredded
- 100 gPomelo, pulp
- 100 gJackfruit, seeded and sliced
- 1Large tomato, seeded and sliced
- 10 gLaksa leaves, chopped
- 2springs Coriander leaves, chopped
- 3 tbspCoconut milk
- Fried shallots (as desired)
1) Blend together Thai palm sugar, fish sauce and lime juice in the mixer grinder to make dressing. Put in the refrigerator to chill for about 10 minutes.
2) Set aside some fried shallots, then place all the remaining ingredients together in a large bowl.
3) Add the dressing and toss well, ensuring the ingredients are all evenly mixed.
4) Garnish the salad with fried shallots and serve immediately.
