Chicken Dried Meat

Bak Kwa is a famous customary and must-loved Chinese New Year snack. You can make your own healthy version at home with chicken thighs or minced chicken.


Ingredients
- 450 gBoneless chicken thigh, cut into cubes
- 100 g Sugar
- 2 tbsp Honey
- 1 tbsp Soy sauce
- ½ tbsp Fish sauce
- 1 tbsp Oyster sauce
- 1 tsp Dark soy sauce
- ½ tsp Five spice powder
- A pinch White pepper
- ½ tsp Salt
Method
STEP 1
Process chicken meat in a food processor.
STEP 2
Transfer minced chicken into a bowl and add all the seasoning ingredients and mix well.
STEP 3
Marinate the minced meat in the refrigerator for 2 to 3 hours.
STEP 4
Preheat Panasonic Cubie Oven to 200oC on convection mode.
STEP 5
Line two Cubie trays with aluminium foil. Spread out the minced chicken mixture evenly on the trays.
STEP 6
Bake the Bak Kwa for 20 minutes. Using a scissor, carefully cut into four equal pieces. Flip the four pieces around and brush with oil.
STEP 7
Continue to bake for another 7 minutes. Remove and flip again then brush with oil. Repeat this process one more time.
STEP 8
Lastly, increase the temperature to 230oC. Flip and oil another round then bake for a final 8 minutes till edges are slightly burned.
STEP 9
Remove from the oven and set aside till cool.
