Durian Butter Cake

Muffins are great for anytime of the day! Oats can be added into the muffin batter to increase the fiber intake, making them healthier.


Ingredients

- 250 gAnchor Butter
- 190 gCaster Sugar
- 200 geggs (about 4 eggs)
- 200 gFlour
- 60 mlAnchor milk
- 1 tspvanilla essence
- 1 tsplime juice
- 100 gGold Thon durian paste
Garnish
- 100 gAnchor whipping cream
- 1 tbspSugar
- 100 gGranola
Method
STEP 1
Preheat Panasonic Cubie oven to 160°C on convection function.
STEP 2
In a mixing bowl, cream together butter and sugar till fluffy.
STEP 3
Add in the eggs, one egg a time and mix well.
STEP 4
In a separate bowl, sieve together the flour and baking powder.
STEP 5
Fold in half the flour using a spatula. Gradually add milk, followed by the remaining flour.
STEP 6
Add in lime juice, vanilla essence and durian paste. Mix well.
STEP 7
Pour batter into 2 loaf tins.
STEP 8
Bake for 35-45 minutes or until the skewer comes out clean.
STEP 9
Remove from oven and let cool.
STEP 10
Whip up cream with sugar till fluffy then spread onto cake. Garnish with granola on top.
