Fried Chicken Quesadilla

Quesadilla is a grilled tortilla filled with a variety of ingredients and melted cheese. The flavour combinations are endless and they are usually a tasty excuse to clean out leftovers from the fridge.


Ingredients
Fried chicken
- 200 gchicken tender
- 1 tbspMcCormick Garlic Powder
- 1 tspMcCormick Chili Flakes
- ½ tsp McCormick Black Peppercorn Grinder
- Pinch of sat
- 1 pktMcCormick Season 'n Fry Chicken Coating Mix
- Oil for shallow fry
For the Quesadilla
- 1 tbspolive oil
- 1yellow onion, diced
- 1capsicum, diced
- ½ cup corn
- 1 tbsplime juice
- ½ cup Mozzarella Cheese
- A bunch coriander leaves
- 2 pcs tortilla wraps
- Handful lettuce, sliced
Method
STEP 1
To prepare the fried chicken, season chicken with olive oil, Garlic Powder, Chili Flakes, freshly cracked black peppercorn and salt. Mix well and set aside.
STEP 2
Pour Chicken Coating Mix in a medium bowl, add the chicken in batches and lightly toss to coat.
STEP 3
Deep fry the chicken until golden brown. Slice into chunks. Set aside.
STEP 4
Heat up the oil and sauté onions until softened. Add in the capsicum, corn, lime juice and cook for about 5 minutes. Set aside and let the filling cool down.
STEP 5
In a big clean bowl, combine chicken, sautéed mixture and cheese. Mix well.
STEP 6
Preheat Panasonic Cubie Oven at 160°c on convection mode.
STEP 7
Lay one piece of tortilla wrap on the baking tray and top with the filling mixture and some coriander leaves.
STEP 8
Place another piece of tortilla wrap over the top and press down gently.
STEP 9
Bake for 10 mins or until crispy.
STEP 10
Served with sliced lettuce on the side.
