Healthy Slow Cooked Salmon

Ingredients

  • 2 tspExtra-virgin olive oil
  • 2 pcsThick salmon fillet
  • 2 pinchesSalt
  • 2-3 sprigs Fresh thyme
  • 3 tbspChopped fresh chives for garnishing (optional)
  • Salad leaves
  • Olive oil for pan frying

For yogurt dressing

  • ¾ cup Greek yogurt, for serving
  • ½ tsp Lemon zest
  • 2 tbspFresh lemon juice
  • 1 tbspChopped fresh dill
  • Salt and black pepper to taste

Steps

1) Rub salmon fillets with olive oil and sprinkle lightly with salt. Then, put it in a food storage bag and seal it.

2) Place it in the Panasonic Microcomputer Rice Cooker inner pot and pour in water to waterline 4 of “White Rice”. Close the lid and select COOKING -> LOW TEMP COOKING -> TIME -> 40 MINS -> START.

3) Once the salmons done, carefully remove it from the bath and bag.

4) Heat up some olive oil in a frying pan and sauté thyme until fragrant. Place the salmon skin-side down in the pan and pan fry until the skin is crispy and golden brown.

5) For yogurt dressing, mix all the ingredients until well combined.

6) Serve salmon fillets with yogurt dressing and salad leaves.
