Pomegranate & Orange Salmon

This is a beautiful dish rich with complimenting flavours. With steamed salmon topped with the sweetness of oranges and tangy pomegranate salsa, a perfect dish for a light and healthy meal.


Ingredients
- 4 pcsSalmon Filet
- 2 tbspOlive Oil
- 1 nosOrange, sliced
- Salt and Pepper to taste
Fondant Potato & Roasted Tomato
- 4-5 nos Potato, large
- 2 tbspOlive Oil
- Sat and Pepper to taste
Salsa
- 1 nosPomegranate
- 1 nosOrange, chopped
- 2 nosShallot, diced
- 2 nosGreen Chili, chopped
- 2 nosLime Juice & Zest
- A Pinch Cumin Powder
- A Handful Coriander, chopped
- Salt and Pepper to taste
To prepare Potato
Method
STEP 1
Peel and cut potato into 1 inch thick. Cut into cylinder using a round cutter.
STEP 2
Preheat Cubie oven Select -> CONVECTION (with preheat) -> Set temperature at 150°C.
STEP 3
Heat olive oil on medium heat, season potato and tomato with salt and pepper and pan fry for 3-4mins each side or until brown. Place seared potato on rack with tray. Set roasted tomato a side.
STEP 4
After oven is preheated, place whole tray with potato into Cubie oven at middle position. Set timer ->10mins -> START. Once done, set aside.
To prepare Salmon & Salsa
Method
STEP 1
Remove salmon from fridge and let it sit in ambient for 30mins.
STEP 2
Season salmon with salt and pepper, place onto cubie oven baking tray. Drizzle olive oil and lay some orange slices on salmon.
STEP 3
Place salmon into Cubie oven, Select -> STEAM MED-> Set timer -> 8mins -> START.
STEP 4
For the salsa, mix everything together and chill in fridge.
STEP 5
Serve steamed salmon with salsa.
