Ingredients

1 spring chicken
4 red dates, halved and pitted
2 fresh Korean ginseng roots
4 garlic cloves
100 g glutinous rice, soaked in water for at least 1 hour
2 tsp salt
1.2 litre hot boiling water
1 stalk spring onion, sliced, for garnishing

Method

STEP 1

1) Clean chicken, remove excess fat inside chicken cavity and pat dry. Stuff the glutinous rice (reserving 1 tbsp) and half the Korean ginseng, red dates and garlic cloves into chicken cavity. Seal opening with toothpick.

STEP 2

2) Place chicken into a ceramic pot. Add the remaining glutinous rice, ginseng, red dates and garlic together with salt and water.

STEP 3

3) Cook on Stew mode for 3 hours. Add sliced spring onion and serve hot.
