Samgyetang (Ginseng Chicken Soup)

Ingredients

- 1spring chicken, around 800 - 900 g
- 4red dates, halved and pitted
- 2fresh Korean ginseng roots
- 4garlic cloves
- 100 gglutinous rice, soaked in water for at least 1 hour
- 2 tspsalt
- 1.2 litrehot boiling water
- 1stalk spring onion, sliced, for garnishing

Method
STEP 1
Clean chicken, remove excess fat inside chicken cavity and pat dry. Stuff the glutinous rice (reserving 1 tbsp) and half the Korean ginseng, red dates and garlic cloves into chicken cavity. Seal opening with toothpick.
STEP 2
Place chicken into a ceramic pot. Add the remaining glutinous rice, ginseng, red dates and garlic together with salt and water.
STEP 3
Cook on Stew mode for 3 hours. Add sliced spring onion and serve hot.
