Spanish Gazpacho Soup

A classic, healthy cold soup made of raw blended vegetables. Add some ice or chill it in the fridge, and it becomes a cool and refreshing meal for a hot afternoon.


Ingredients

- 500 g Red Tomato, very ripe, cut 4
- ¼ nos Cucumber
- ¼ nos Red Capsicum
- ¼ nos Shallot
- ½ nos Garlic
- 1 tbspLemon Juice
- 2 tbspOlive Oil
- Salt to taste
- 4 pcsCrusty Bread, toasted
Method
STEP 1
Put all ingredients in the blender and puree until fine.
STEP 2
Strain through a sieve and serve or chill for 1 hour.
STEP 3
Drizzle olive oil on gazpacho and serve with toasted crusty bread.
