  • 500 g Red Tomato, very ripe, cut 4
  • ¼ nos Cucumber
  • ¼ nos Red Capsicum
  • ¼ nos Shallot
  • ½ nos Garlic
  • 1 tbspLemon Juice
  • 2 tbspOlive Oil
  • Salt to taste
  • 4 pcsCrusty Bread, toasted

Method

STEP 1

Put all ingredients in the blender and puree until fine.

STEP 2

Strain through a sieve and serve or chill for 1 hour.

STEP 3

Drizzle olive oil on gazpacho and serve with toasted crusty bread.
