Steamed Lotus Rice with Garlic Prawns

Ingredients
- 2 pcs dried lotus leaves, boiled until softened
- 230 grice, washed
- 2 tbsp cooking oil
- 20 gdried shrimp, soaked and chopped
- 2 tsp garlic, chopped
- 60 gcarrots, cubed
- 3 Chinese dried mushrooms, soaked and cubed
- 3 tsp soy sauce
- 1/4 tsp sesame oil
- 1/8 tsp salt
- Dash of pepper
- Few drops of dark soy sauce
- 400 gwater
- 8 medium size prawn, deveined
- 30 ggarlic, chopped
- 3 tbsp cooking oil

Method
STEP 1
Place 30 g of chopped garlic and 3 tbsp cooking oil in a small oven-proof dish and cook on Healthy Fry (with preheat) mode for 10 minutes. Set aside.
STEP 2
In a casserole, combine oil and dried shrimp and cook on Healthy Fry mode for 5 minutes. Add garlic and continue to Healthy Fry for another 5 minutes. Add in cubed carrots, mushroom, rice and all the seasoning and water. Stir well. Cook on Healthy Steam mode at 120°C for 30 minutes.
STEP 3
Arrange boiled lotus leaves in a deep bowl. Fill up cooked rice and arrange prawns on top. Spoon garlic onto the center part of prawns and drizzle some garlic oil on top.
STEP 4
Cook on Healthy Steam mode (with preheat) at 150°C for 12 minutes.
STEP 5
Serve warm.
