Ingredients

Mochi dough:

  • 90 gGlutinous rice flour, plus more to dust
  • 1/4 cup Cornstarch
  • 1/4 tsp Salt
  • 180 mlWater
  • 1 tbspVegetable oil
  • 6 pcsStrawberries, stems removed

Date paste

  • 120 gMedjool dates, pitted (or soak red dates for 30 mins)
  • 90 mlWater, plus more if needed

1. Prepare Date Paste

Steps

STEP 1

Combine medjool dates and water in a bowl

STEP 2

High | 1.5 mins

STEP 3

Transfer dates and liquid to blend until smooth

STEP 4

Blend | Speed 1

2. Cook Mochi Dough

Steps

STEP 1

Combine glutinous rice flour and cornstarch.

STEP 2

Add vegetable oil, salt and water

STEP 3

Whisk until smooth

STEP 4

High | 1 min

STEP 5

Take out and gently mix the mixture

Tip: Repeat 2-3 times at 30 secs, mix in between until mochi is cooked

3. Roll mochi dough

Steps

STEP 1

Cut into 6 pieces.

STEP 2

Place 10g of red date paste and wrap

STEP 3

Cut a slit to place strawberry onto mochi
