Apple and blackberry loaf

Perfect for baking in March our Apple and Blackberry loaf is a delicious treat. Using our Panasonic Breadmaker you can easily create this loaf and make it your own! If apple and blackberry is not your first choice then adding different dried and mixed fruits also works perfectly.

Ingredients

  • Self-raising flour
  • Butter
  • Soft brown sugar
  • Cinnamon
  • Demerara
  • Apple
  • Eggs
  • Baking powder
  • Blackberries

Measurements

  • 250g
  • 175g
  • 175g
  • ½ tsp
  • 2 rounded tbsp
  • Quartered, with skin and core
  • 2 large eggs, beaten
  • 1 tsp
  • 225g

Method

  1. Put the flour, butter and sugar into a bowl. Rub together with your fingers until the mixture looks like bread crumbs. Set aside 5 tbsp of this mixture and combine with the spice and Demerara sugar. This will be the topping.
  2. Roughly grate the apple down to the core and combine with the eggs.
  3. Stir the baking powder into the flour mix and quickly and lightly stir in the egg mixture being careful not to over mix.
  4. Carefully fold in ¾ of the berries and spoon the mixture into the prepared bread pan. Scatter the remaining berries on top and sprinkle the topping on.
  5. Select BAKE and set the timer for 1 hour.
