Ingredients
For the Skewers:
- 1red bell pepper, cut into chunks
- 1yellow bell pepper, cut into chunks
- 1zucchini, sliced into thick cubes
- 1red onion, cut into wedges
- 8cherry tomatoes
- 1 tablespoonolive oil
- 1 teaspoondried oregano
- 1 teaspoondried basil
- 0.5 teaspoongarlic powder
- 0.5 teaspoonsalt
- 0.25 teaspoonblack pepper
For the Yogurt Dip:
- 0.5 cupGreek or regular yogurt
- 1 tablespoonlemon juice
- 1 smallclove garlic, minced
- 1 tablespoonfresh mint, chopped
- Salt and pepper to taste
Steps
STEP 1
Prepare the Skewers:
- In a large bowl, combine olive oil, oregano, basil, garlic powder, salt, and black pepper.
- Add the bell peppers, zucchini, onion, and cherry tomatoes. Toss to coat the vegetables evenly.
- Thread the vegetables onto skewers, alternating types of vegetables.

STEP 2
Cook Using Combination Function:
- Place the skewers on the metal tray or wire rack provided with the microwave.
- Cook for 10-12 minutes on the Combination Setting (Combi 1: Grill + Microwave), turning halfway through, until vegetables are tender and slightly charred.

STEP 3
Prepare the Yogurt Dip:
- In a small bowl, mix Greek yogurt, lemon juice, minced garlic, mint, salt, and pepper.
