For the Spring Rolls:

  • 8spring roll wrappers
  • 0.5 cuplow-fat mozzarella cheese, shredded
  • 0.5 cupgrated halloumi cheese
  • 0.5 cupfeta cheese
  • 2 tablespoonsolive oil
  • 2 tablespoonsfresh zaatar, chopped (or substitute with fresh parsley)
  • 1 tablespoonnigella seeds or toasted sesame seeds
  • 1 tablespoonolive oil (for brushing)

Steps

Prepare the Filling:

  • In a bowl, mix all the cheeses, fresh zaatar, and nigella seeds.
  • Stir well until evenly combined.

Assemble the Spring Rolls:

  • Lay a spring roll wrapper on a clean surface.
  • Place about 2 tablespoons of the cheese and herb mixture near one corner.
  • Fold the corner over the filling, then fold in the sides, and roll tightly.
  • Seal the edge with a little water.
  • Repeat with the remaining wrappers and filling.
  • Freeze the cheese spring rolls for 25-30 minutes before air frying

Bake the Spring Rolls:

  • From the Auto Cook Setting, use the dial to set the program and weight.
  • (Recommended: Program No. 19 for air frying method).
  • Place the spring rolls on the metal tray or wire rack in the microwave.
  • Brush lightly with olive oil.
  • Air fry for 10 minutes, flipping halfway, until golden and crispy.
