Ingredients
For the Muffins:
- 1 cupwhole wheat flour
- 0.5 cupall-purpose flour
- 1 tspbaking powder
- 0.5 tspbaking soda
- 0.5 tspsalt
- 1 tspdried herbs (oregano or thyme)
- 0.5 cupgrated carrots
- 0.5 cupchopped spinach
- 0.25 cupchopped bell peppers (any color)
- 0.25 cupgrated cheese
For the Wet Mixture:
- 0.5 cupplain yogurt
- 0.25 cupolive oil
- 2large eggs
- 0.25 cupmilk
Steps
STEP 1
Prepare the Oven:
Preheat your Panasonic microwave oven on convection mode to 180°C (350°F).

STEP 2
Mix the Dry Ingredients:
In a large bowl, combine whole wheat flour, all-purpose flour, baking powder, baking soda, salt, and dried herbs.

STEP 3
Mix the Wet Ingredients:
In another bowl, whisk together yogurt, olive oil, eggs, and milk until smooth.

STEP 4
Combine Ingredients:
Gradually add the wet mixture to the dry ingredients and mix until just combined. Fold in grated carrots, chopped spinach, bell peppers, and cheese.

STEP 5
Fill the Muffin Molds:
Grease microwave-safe ramekins (6 cm) or use silicone muffin molds. Fill each mold about 3/4 full with the batter.

STEP 6
Bake:
Place the tray in the microwave and bake on convection mode for 20-25 minutes or until a toothpick inserted in the center comes out clean.

STEP 7
Cool & Serve:
Let the muffins cool for a few minutes before removing them from the tray. Serve warm or store in an airtight container.
