Matcha Almond Paste

  • 80 gAlmond
  • 10 gWalnut
  • 20 gWhite Glutinous Rice
  • 20 gPeanut
  • 50 gRock Sugar
  • 5 gRed Dates
  • 2 tbspMatcha Powder
  • 600 mlWater

Garnish

  • 5 mlYuzu Juice
  • 1 tspCream

Black Sesame Paste

  • 120 gBlack Sesame
  • 15 gPeanut
  • 15 gWhite Glutinous Rice
  • 20 gDark Mulberry
  • 10 gRed Dates
  • 50 gRock Sugar
  • 600 mlWater

Steps

1) Fold two paper origami trays. Spread matcha almond ingredients (almond, walnut, glutinous rice, and peanut) on one side, and black sesame ingredients (black sesame, peanut, and white glutinous rice) on the other.

2) Place trays into the preheated oven with Convection | 170°C and start baking for 20 mins

3) Add roasted matcha almond ingredients into the cooking blender. Add rock sugar, red dates, matcha powder and water. Cover and secure lid.

4) Cook with Soy Milk | 40 mins. Once done, pour out matcha paste and set aside. (Cooking Tip: Cover to avoid curdling. Best served hot.)

5) Add roasted black sesame ingredients into the rinsed cooking blender.

6) Add dark mulberry, red dates, rock sugar and water. Cover and secure lid. Cook with Soy Milk | 40 mins.

7) Top matcha paste with black sesame paste. Drizzle with cream.
