For the Kofta:
- 250 gramsminced lamb
- 1small onion
- 0.5 cupparsley
- 1small tomato
- 2 tablespoonsolive oil
- 1 teaspoonsalt
- 1 teaspoonblack pepper
For the Vegetables:
- 1 cuppumpkin, cut into large cubes (approximately 250 grams)
- 2small zucchini, cut into cubes
- 1red bell pepper, cut into cubes
- 1medium onion, sliced
- 1 tablespoonolive oil
- 1 teaspoonred pepper flakes
- 1 tablespoonzaatar mix
- 0.5 teaspoonsalt
- 0.5 teaspoonblack pepper
Method
1. Prepare the Marinade/Sauce:
For the Kofta, blend parsley, onion, and tomato in a food processor until smooth. Mix this with the minced lamb, olive oil, salt, and black pepper.

2. Prepare the Ingredients:
Divide the kofta mixture into 8 equal portions and shape into kebab forms. If using wooden skewers, soak them in water for 30 minutes. For the vegetables, combine the pumpkin, zucchini, red bell pepper, and onion in a microwave-safe pan with olive oil, zaatar, red pepper flakes, salt, and black pepper.


3. Cook the Dish:
- Vegetables: Cook in the microwave on Combination Setting 3 for 12 minutes, adjusting based on vegetable size.

- Kebabs: Arrange the kebabs on the wire rack and cook using Combination Setting 2 for about 10 minutes until fully cooked.

4. Serve:
Serve the lamb kebabs with the roasted vegetables and a side of whole wheat pita bread.
