Roast Duck with Honey & Hoi Sin Sauce
Impress guests with this crispy-skinned roast duck glazed with honey, served with a sweet, savoury sauce, and stir-fried snow peas. For a juicier option, try barbary duck.

Preheat the microwave oven by pressing OVEN once, turn the dial to set the temperature to 180°C and press START/SET. Season the duck breasts with ground cumin, salt and pepper on both sides.
Bring a pan to high heat, sear the duck on the flesh side for 1 minute, then sear the skin side for 5 minutes on low heat. Once the skin is of a nicely-roasted colour, roast in the preheated oven for 8 minutes. Test it by inserting a skewer. If the juices run clear, it is done. Then allow it to rest for 5 minutes.
To make the sauce mix, bring the honey and Hoi Sin sauce to a boil. Cut the duck into fine strips and drizzle with the sauce mix.
Preheat a frying pan on high heat. Add in the olive oil, sauté the garlic, then stir-fry the snow peas for about 3 to 4 minutes. Add salt to taste.
Tips: Try barbary duck for a juicier option – it can be eaten medium to medium well.
