Honey Glazed Gammon

  • Unsmoked gammon joint
  • Onion , peeled and halved
  • Carrot, peeled, roughly chopped
  • Celery stalk, roughly chopped
  • Bay leaves
  • Peppercorns
  • Whole cloves
  • Runny Honey
  • English mustard
  • Cloves

  • 1 carrot

Method
  1. Place all the above ingredients except the honey, mustard and cloves in a very large casserole dish. Place on the base of the oven and Cook on HIGH MICROWAVE for 15 mins then MEDIUM MICROWAVE for 15- 20 mins per 450g. Drain and set aside to cool for 15 mins.
  2. Mix the honey and mustard together.
  3. Use a small knife to remove the rind from the gammon joint, leaving as much of the fat intact as possible. Score the fat in a diamond pattern, and push a clove into the centre of each X. Brush over half of the glaze.
  4. Pre-heat the oven on CONVECTION 180C + GRILL 1, cook for 10-15 mins. Spread over the remaining glaze half way through cooking.

Roasted Sprouts with Bacon and Pomegranate Seeds

Roasted Sprouts with Bacon and Pomegranate Seeds

  • Brussel sprouts, peeled
  • Bacon lardons
  • Toasted sesame seeds
  • Pomegranate seeds
  • Salt & freshly ground pepper

Method
  1. Pre heat the oven on CONVECTION 200°C
  2. Halve any large sprouts and toss them with the oil.
  3. Place the sprouts and lardons in the enamel tray and roast for 20 mins or until tender and turning golden. After 15 mins of cooking scatter over the sesame seeds and continue to cook until the seeds are toasted.
  4. Pile into a warmed serving dish, season, then toss through the pomegranate seeds.

  • Potatoes, peeled and quartered
  • Flour
  • Oil
  • Garlic left whole (optional)
  • Rock Salt
  • Black Pepper
  • Rosemary for garnish

Method:
  1. Peel and cut potatoes into even sized pieces. Weigh the potatoes ready to enter on the auto program.
  2. Place in the glass shelf. Add 1-3 tbsp of olive oil and a few cloves of garlic if using.
  3. Place in the lower shelf position.
  4. Press the AUTO WEIGHT MENU 6 times for roast potatoes.
  5. Enter the weight of the potatoes and press start. Alternatively cook on CONVECTION 250ºC + GRILL 1 + WARM MICROWAVE for 30 mins or until golden and crunchy, turning and basting potatoes during cooking.
  6. Remove when cooked and garnish with salt, pepper and a fresh rosemary sprig.

  • Chipolata sausages
  • Runny Honey
  • Sesame Seeds

Method
  1. Pre-heat the oven on CONVECTION 200C
  2. Place the bacon on a chopping board, using the side of a knife, stretch and flatted the bacon until about half as long again.
  3. Cut each strip of bacon in half across, then wrap each piece around a chipolata.
  4. Place in the metal dish in the middle shelf position. Cook for 10 mins then drizzle with the honey and sesame seeds. Continue to cook for a further 5-10 mins until golden brown.
